If you are like me, you get tired of eating the same bowl of oatmeal and cooked scrambled egg whites day in and day out! This recipe is a great way to break away from the norm. Finding creative ways to prepare foods high in protein will make meals more enjoyable and keep you on the right track with your diet, instead of dreading the next meal. I believe this makes dieting so much more fun and tasty! This recipe is going to teach you how to make that boring breakfast into not only a yummy one, but one that’s rich in nutrition and tastes like you went to the coffee shop and ordered a muffin out of the pastry display (without the calories and saturated fat).
Two important ingredients in this recipe I feel people avoid simply due to lack of knowledge on their powerful benefits on the hair, skin, nails, and body!
1. Flax seed is very low in carbohydrates which makes this little seed ideal for dieters who limit their starch and sugar intake. Its combo of healthy fats and high fiber content make it ideal for weight loss and maintenance -many dieters have found that flax seed has been a key to keeping them feeling satiated.
Flax seed is rich in omega-3 fatty acids: Omega-3 fatty acids are a key force against inflammation in our bodies. Mounting evidence shows that inflammation plays a part in many chronic diseases including heart disease, arthritis, asthma, diabetes, and even some cancers. Not to mention omega-3 promotes healthy hair, skin and nails!
Flax seed is high in fiber: It would be hard to find a food higher in fiber, both soluble and insoluble than flax. Fiber is mainly responsible for the cholesterol-lowering effects of flax. Fiber in the diet also helps stabilize blood sugar, and, of course, promotes proper functioning of the intestines.
2. Blueberries are often referred to as the “Super Fruit”. Blueberries have low calories, low fat, no cholesterol, no saturated fats, low carbohydrates and low sugars and taste great in protein shakes too!
Blueberries are loaded with antioxidant compounds: Antioxidants help neutralize free radicals which are unstable molecules linked to the development of a number of diseases including cancer, cardiovascular disease and other age-related conditions such as Alzheimer's. Damaging free radicals also lead to skin cell damage and premature skin aging generated in the skin by excessive sun/tanning bed exposure or from other sources (pollution, smoke, stress, alcohol, charred food, pesticides, etc).
Blueberries are also loaded with vitamin C: Vitamin C is needed for the formation of collagen and to maintain healthy gums and capillaries. It also aids in the absorption of iron and promotes a healthy immune system.

Preheat oven to 375°.
Spray non-stick spray into the large muffin pan cups (Holds 24 Mini Muffins).
In a bowl or Magic Bullet (I prefer), mix all ingredients together.
Pour the batter into the muffin cups evenly and not quite to the top.
Put the remaining blueberries in the center of each muffin cup.
Place on the center rack of the oven and bake for 12 to 14 minutes, or until the tops are golden brown.
Remove from oven and let cool.
